Kalua Pork and Pineapple Pizza
Cheddar and mozzarella cheese and pesto on Jim Lahey’s whole wheat pizza crust.  Inspired by Merriman’s Café.

Kona Coffee Coated Macadamia Nuts
Big Save grocery in Koloa had a sale on them while we were in Kauai, so we brought back a bunch!

Roasted Spiced Lamb Meatballs
Ground lamb, parsley, zatar, fennel seed and feta.  We ordered these twice at Josselin’s Tapas Bar to identify the seasonings, then Joe checked with the chef.

Spicy accompaniment: Kimchee and sweet chili sauce ranch dressings

Cool accompaniment:  Chickpea and goat cheese salad with field greens and vinaigrette

Bahia Shrimp
Served in a coconut milk, orange and fresh salsa sauce, over steamed rice.  We encountered this dish at Savage Shrimp, a former food truck relocated to the shopping village that usurped its corner.

Sautéed Kale with Honey Yogurt and Salted Peanuts
Kale seems to be this year’s “in” vegetable.  Jeanne actually had this version at Legal Seafood in Boston

Baked Hawaii
Mango sherbet on chocolate brownie, topped with oven-browned meringue and served with lilikoi syrup.  From Casa di Amici, about three miles east of Kukui’ula.  

Roasted Banana and Salted Caramel Ice Cream
Inspired by a flavor at Lappert’s, the Kauai local ice cream makers.  This version is homemade.

Kirkland Signature Chocolate Truffles
  A specialty of Costco, which we visited in Kauai and Japan.  Coming soon to Rochester!
