Rijstaffel is the Dutch version of an Indonesian feast: a large bowl of rice is served with a variety of curries seasoned to Western tastes.  Since we’ve been in Japan and the South Pacific this year as well as the Netherlands and Belgium, we’ve substituted dishes of other ethnic origins for some of the curries.

Rijstaffel Jasmine Rice
Pace yourself!  There are six dishes to put on your jasmine rice! Not necessarily listed in order of appearance:

Beef Short Ribs with Chocolate Mole Sauce
More Mexican than Indonesian, but MS Marina circles the globe and serves international cuisine

Chicken Tikka Masala
Yogurt-marinated broiled chicken served in a tomato and coconut milk curry sauce

Carbonnade a la Flamande
Traditional Flemish beef, onion and beer stew

Barramundi in Miso-Plum Sauce
Marinated and baked according to an MS Marina recipe

Penang Curry Beef Short Ribs
Coconut milk, peanuts, lemon grass and galangal

Gaeng Masaman Vegetable Curry with Cashews
The Thai version of an Indonesian dish.  Cauliflower, green beans, tomatoes and cashews in a mild curry sauce.

Red Apple and Crispy Vegetable Salad
No, this one doesn’t go on the rice.  Served with maple vinaigrette

Russian Pistachio Cream on Daquoise
We don’t know why this meringue confection is considered Russian, because it’s modeled on a torte from a Paris patisserie.  We had it on the MS Marina somewhere between Bora Bora and Fiji.

Roasted Pineapple Tartlet
Ah the memories of afternoon tea while at sea on the MS Marina!  The string quartet!  The white-gloved servers!  The variety of tea sandwiches and sweets!  This is one of the recurring offerings.
