Grilled cheese and macadamia nut pesto sandwiches
Grilled cheese is a thing again!  We had these at Midnight Bear Bakery in Hanapepe.  We’re substituting Wegman’s sourdough for that of bread goddess Ursa Swift.

Seafood Risotto
This is the Hawaiian version, with shrimp, scallops and mahi mahi.

Pork Two Ways
What would happen if Kickshaws food truck (Lawai) backed into Porky’s Cart (Waimea)?  Sous vide pork tenderloin and roasted pineapple slices are topped with crispy pulled pork and barbecue sauce.  (Some assembly required.)

This year’s Kauai variation on the beet and goat cheese salad was the addition of roast sweet potato
Bob agreed to share his supply of Aunty Lilikoi’s salad dressing for the party.

Roasted Cauliflower and Brussels Sprouts
Both cauliflower and Brussels sprouts have remained “in” vegetables on Kauai, although they’re often fried.  We’re serving them with pancetta, golden raisins and pine nuts, riffing on a version we had at JO2 in Kapa’a.

Focaccia
Served in Bellagio AND Kapa’a.  Olive oil and butter available.

Tiramisu
We had some terrific gelato in Italy, but we figured the tiramisu was easier to duplicate.

Lilikoi and Coconut Cream Tart
Lilikoi and coconut tarts and pies are frequent Kauai menu items.

Hula Pie
The signature dessert at a string of Hawaiian restaurants and our last-night-of-trip indulgence.  Macadamia nut ice cream in a chocolate cookie crust with fudge sauce, whipped cream and more macadamia nuts.
