It’s Travel Dinner Time, eh!
Memories from Canada, the Netherlands and our Caribbean Cruise

9 March 2019

Moraine Lake, Banff National Park, Alberta Canada

Mango, Red Onion and Goat Cheese Quesadillas
Avocado Shrimp Salsa
The Terrace Café dinner buffet on Oceania cruise ships features both hot and cold appetizers daily.  This was from the Mexican menu. We offer both flour and corn tortillas.

GF Puffs with Sundried Tomatoes and Boursin or Black Olive Cream
These fillings were actually served on croustades aboard, but puffs contain them better.

Lobster Poutine with Sweet Potato Fries
Encountered in Ottawa while eating out with David’s family.

Prosciutto Wrapped Chicken Breast with Goat Cheese and Pesto
White Wine Pesto Sauce

This year, the Oceania chefs were into roulades, wrapping porchetta, prosciutto or zucchini slices around various meats and fillings.  Our tasting panel endorsed this version.

Thai Watermelon Salad
Also from our cruise, but reminiscent of the spicy fruit salads we’ve eaten in Bangkok.

Shredded Brussels Sprouts with Bacon and Caesar Vinaigrette
We encountered these in the Canadian Rockies.

Jasmine Rice

Passion Fruit Sorbet
Oceania cruise chefs produce a different flavor of sorbet every day.  This was a popular one!

Sticky Toffee Pudding
We enjoyed this dish at the Duchess Restaurant in Sittard, Netherlands.  This isn’t chef Ben Arnold’s recipe (ours is gluten free), but our tasting panel says we have the flavor right.

Baby Beavertails
Another Ottawa treat. We had full-sized versions of these on a snowy street corner with David’s family Thanksgiving weekend.  The vendor offered at least nine choices of topping, but we’re sticking with Nutella, cinnamon sugar or powdered sugar with lemon. Some assembly required.
