Apple Rice

1 c. water

2 c. apple juice

6 Granny Smith apples, peeled and diced (~ 2 lbs.)

3 scallion stalks, chopped fine

1 onion, chopped fine

1 cinnamon stick

2 c. white rice

¼ tsp. ground black pepper

In large pot, over medium heat, add the apples, scallion, onion and cinnamon stick. Sweat until onions are clear, 3 – 5 min., stirring constantly.  Add the rice and pepper, cook 3 mins.  Add the apple juice and water.  Bring to a simmer and cook until done.
