We encountered this dish at The Hail’imaile General Store, Beverly Gannon’s restaurant on the slopes of Mt. Haleakala, Maui.

 

 

Jawaiian Chicken Breast with Banana-Rum-Mango Sauce

Another Beverly Gannon recipe, somewhat modified.

 

Chile Corn Bread

An adaptation of the original accompaniment to the Jawaiian Chicken.

Kona Chocolate Macadamia Nut Coffee, Decaffeinated

On the Big Island, coffee is sometimes served like wine, with estates and vintages specified.  This is a blend of beans from the Koa Plantation, but we don’t know when it was harvested.
