Salad
with Asian Pears, Sweet Onions and Macadamia Nuts
1 Asian
pear 1 Sweet
onions, sliced in thin wedges 2 oz.
blue cheese, crumbled 8 oz.
arugula or field greens ¼ c.
macadamia nuts, halved Red cabbage,
finely shredded Shredded
coconut Coconut
Dressing ¼ c.
coconut milk 2 T.
honey-Dijon salad dressing 1 ½ tsp.
lime juice 2 ½ tsp.
sugar |
Peel
Asian pear, core, and slice into matchstick sized pieces. Roast onions until tender. Toss with Asian pears, greens, coconut
dressing, blue cheese and macadamia nuts.
Garnish with red cabbage and coconut. Dressing
– whisk together the dressing ingredients until well blended. Cover and refrigerate until ready to serve. |
