Sweet Potato Sesame Puree

 

 

6 lbs. sweet potatoes (preferably Okinawan purple sweet potatoes)

2 T. sesame oil

¼ c. toasted sesame seeds (white or black)

¼ c. margarine

salt

pepper

 

Peel and cube sweet potatoes.  Boil until tender.  Drain and mash until smooth.  Stir in sesame oil, sesame seeds and margarine.  Season to taste with salt and pepper.
