Tortellini with Roasted Garlic Sauce

 

Peel and roast 4 heads of garlic.  In food processor, blend with 2 c. small curd low fat cottage cheese.

In saucepan, combine 3 c. fat free sour cream and

2 12 oz. cans evaporated skim milk.  Simmer 5 min.  Stir in garlic cheese mixture. 

Add 3/4 c. Parmesan cheese

6 T. fresh basil

Salt and white pepper to taste

Toss with 3 lbs. of cheese tortellini, cooked,

2 lbs. frozen peas 2 lbs. (cooked al dente)

1 lb. shredded turkey ham or salami

24 oz. sliced  baby portabello mushrooms, sauted
