1 lb. Polish sausage links (6 sausages / lb.)
18 brown and serve dinner rolls
Melted butter
Mango relish
Garlic lemon sauce

Brush brown and serve dinner rolls with butter and bake as directed.  Grill, bake or pan fry Polish sausage links and cut into thirds.  With apple corer, bore a hole horizontally almost through each dinner roll.  Fill hole with mango relish and garlic lemon sauce and push sausage link into hole.  (Sauce will be absorbed by roll).  Serve with additional mango relish and garlic lemon sauce in squeeze bottles.

Mango relish
1 large ripe mango
1 T. granulated sugar  (more if mango is unripe)
2 T. red wine vinegar
2 T. white wine

 

Peel and cube mango.  Put in saucepan with remaining ingredients, bring to boil, lower heat, cover and simmer until mango is very soft.  Process in food processor until smooth.

Garlic lemon sauce
¾ c. chicken stock
½ c. granulated sugar
¼ c. lemon juice
2 T. red wine vinegar
4 cloves garlic, crushed
1 T. cornstarch
2 T. water
1 T. butter

 

Bring chicken stock, sugar, lemon juice, vinegar and garlic to a boil.  Mix cornstarch and water and stir in, then reduce heat and cook, stirring frequently, until sauce is thickened and translucent.  Remove garlic cloves, stir in butter.
