Shrimp Seviche

 

3 lbs. raw (medium) shrimp, peeled and deveined

2 T. Old Bay seasoning

2 med. onions, cut in thin slices

2 T.  lemon juice

1 red Fresno pepper, finely chopped

3 medium tomatoes, chopped

1/3 c. ketchup

1/2 c. minced cilantro

½ c. orange juice

2 T. lime juice

More lemon juice

½ tsp. dry mustard

1 tsp. hot pepper sauce

Salt and pepper to taste

Bring Old Bay seasoning and 2 liters of salted water to a boil.  Add shrimp and boil no more than 3 minutes.  Chill shrimp.  Mix onion, tomatoes, pepper and cilantro with 2 T. lemon juice.  Add orange juice, ketchup, mustard, hot pepper sauce, lime juice, salt and pepper.  Add additional lemon juice to taste.  Stir in shrimp and chill.
